Finally Summer has arrived at last 🙂 All week the temperature is nice and warm, the sun is shining, no clouds to be seen nowhere and I have for the first time this year swam in an open air pool! It was a bit fresh I have to admit, but nevertheless I have enjoyed it a lot!

Honestly, I was planning to bake something entirely different this week, but I somehow failed and ended up with a lot of dough with no purpose and in my need threw in some caramel pieces to create some caramel cookies. Simple but delicious. Because of this failure and the hot weather I didn’t see me going back to the kitchen to try and try again until what I had in mind would finally work. Instead I enjoyed the sun on the balcony, reading tons of book  which you will probably hear of at my month overview. But yesterday while making a big jug of iced tea again an idea hit me.

I have already mentioned The Hummingbird Bakery baking book Cake Days in this blog earlier and now I was inspired by it again. I have read it over and over again so I had a few recipes in mind which I still wanted to try… One of them where Tea-infused cupcakes! I thought that this idea was just genius, and while making my big jug of iced tea by using regular store-bought ice tea powder I was thinking about these cupcakes.

Immediately I wanted to try them, but using my Blood Orange Iced Tea Powder instead 😛 This powder is supposed to go into the cupcakes as well as into the frosting. But I always find iced tea powder a bit too sweet, so I reduced the amount of it in the frosting for one, and instead of using in it the cupcake as well I exchanged it by using some juice. I really hoped to get some Blood Orange juice as well, but my search wasn’t lucky so I used regular orange juice. Feel free to use any juice and powder you can find and like! I know that there are a lot of great flavors out there incl lemon, apple, lime, orange… the variations are limitless! I find the Hummingbird recipes slightly on the sweeter side, so I reduced the amount of sugar in the cupcake recipe. Feel free if you think that you need more, but I can assure you, the frosting will still be so sweet that you don’t need additional sugar in the cupcakes 😛

I find the orange juice gives the cupcakes a real fresh flavor although you don’t actually taste orange I have to admit. In general these cupcakes are really super summery light and for me I wouldn’t even need the frosting on a hot summer day at all  😛  I hope you will enjoy them as much as I did and maybe play around with different flavors and let me know!

PPS: Little Update here… guess what, I just came home from the supermarket and have seen blood orange juice today, hahaha! Oh well, next time 😉

Ice Tea Cupcakes

  1. Mix together the butter, sugar, flour, baking powder and the salt until crumbly
  2. Slowly add the beaten eggs and the orange juice bit by bit until you get a creamy batter
  3. Divide the batter between your cupcake tins, filling them only by 2/3
  4. Bake them in a pre-heated oven for about 18-20 minutes at 190ºC (170ºC fan)
  5. Let the cupcakes cool completely
  1. Dissolve the Ice Tea Powder in the milk
  2. Carefully cream together the butter and icing sugar
  3. Add the ice tea milk slowly to the mixture until you get a thickened cream
  4. Spread the frosting on top of the cooled cupcakes and decorate if you want

  • 80g Butter, soft
  • 240g Sugar
  • 240g Flour
  • 1 Tbsp Baking Powder
  • a pinch of salt
  • 2 Eggs, beaten
  • 100ml Orange Juice
  • 2 Tbsp Ice Tea Powder
  • 50ml Milk
  • 500g Icing Sugar
  • 160g Butter, soft
