I cant believe how much I love to stand in the kitchen and to bake ♥ I know that I wasn’t creating a lot of recipes or blogging regularly within the last few month, but I guess starting a new job really demands you to find a new routine in life again (especially when one has to commute 3.5 hours per day in total) and real life just isn’t the same as it used to be. But I guess slowly I find a bit of routine again and also the cooler the season the more possibilities to stand in the kitchen the whole Sunday when it is raining or cold outside! There is just nothing better than that! I don’t have to mention the Christmas Season just yet, but isn’t that all about baking anyway? 😛

So, being able to have some time on hand on a grey Sunday I was able again to do some Baking Experiments (as I wouldn’t do enough experiments during the week) and out came these yummie Chocolate Coffee Bean Cookies! I was inspired by my colleagues as Coffee and Chocolate is often the only thing keeping us alive during the day 😛 But as I mentioned earlier I spend a lot of time sitting in buses, trains and trams so I prefer taking something which is somehow easy to transport. So a three-layered cake is out of option, unfortunately. But cookies, that’s easy to make, to transport and still super tasty! Obviously there was only one possible combination…

To add a bit more crunch and coffee flavor I bought these great chocolate-covered coffee beans! You sure know them 🙂 I chopped them into small pieces and together with the chocolate chips and some coffee in they went, can it get any better? Saying crunch by the way, I really mean crunch. You know the feeling when you eat these beans, well imagine small pieces in a cookie. I love them and my boyfriend went nuts, but I kept warning people of what to find inside those cookies before putting them in their mouth as a sudden crunch might seem strange otherwise.

Espresso Chocolate Chip Cookies

For the Cookies

  1. Cream the butter with both types of sugar until, well, creamy
  2. Melt the chocolate above a water bath and after cooling slightly add to the mixture
  3. Combine the dry ingredients and add 1/3 to the mixture
  4. Mix 2 tsp of granulated coffee with 2 tsp of hot water and add to the cookie dough
  5. Add another third of the dry ingredients
  6. Add the egg and mix it in completely
  7. Finally add the last third of the dry ingredients and mix until all is well combined and smooth
  8. Bake for 15-18 Minutes in a preheated 170°C (150°C Fan) oven
  9. Let it cool on the baking plate for about 5 minutes before transferring the cookies on a wire

TIP: When making the cookies use an ice scoop or a 1/4 cup measuring spoon (50ml) to make equal balls of dough, therefore you ensure that all of your cookies are the same size and bake evenly! Also the size of cookies equals the baking time, so smaller cookies would need less time in the oven! When baking them, give them some room on the baking tray as they will spread out. When finished they will still be super soft, but don’t worry, those 5 minutes resting time is enough to harden them, still staying chewy inside!

  • 150g Butter, soft
  • 50g Dark Chocolate, melted
  • 125g Sugar, soft brown
  • 100g Sugar, caster
  • 250g Flour
  • 2 Tbsp Dark Cacao
  • Pinch of Salt
  • 2 Tsp Baking Powder
  • 1 Tsp Vanilla
  • 2 Tsp Espresso, granulated
  • 1 Egg, fridge-cold
  • 100g Chocolate Chips
  • 60g Chocolate-covered Espresso Beans
