Spritzgebäck

Spritzgebäck is a classical German Christmas Cookie baked by probably everyone during Christmas. To be honest, when I was a child I actually never really liked Spritzgebäck. Compared to all the other Christmas Goodies out there, I just found Spritzgebäck too plain and simple somehow… However, since I am the proud owner of a Kitchen Aid with a meat mincer I do bake Spritzgebäck every year. It is just so much fun to do it 😀

Maybe you are thinking now, what does Spritzgebäck has to do with a meat mincer? Well there is special equipment one can buy that fits to your meat mincer and instead of mincing meat it makes fantastic Spritzgebäck! Normally those cookies are made with a piping bag, hence the name Spritz which means squirt. This process can be pretty time consuming and frustrating actually as the ground almonds in the dough can block your piping bag if not grounded fine enough. I guess the Kitchen Aid is a bit more powerful than I would be, because there is no problem whatsoever to squeeze the dough through the different forms 😉

There are different figures to use like a circle, a star (like for the S shaped cookies) or a B that lies on its side (for the straight cookies shown in the picture). I most often used the star form to make some circles or an S shape. For simple lines I use the B shaped form.

I refined the recipe by using real vanilla and some lemon zest. In the end I covered them half with pure chocolate and added some funny or yummy sprinkles! I start to really like them, mostly because the process is so easy and so much fun but also because vanilla and chocolate are always a good thing right? 😉 Even without a Kithchen Aid or meat mincer you can make these simple cookies, just use your piping bag and make sure that your dough is even and fine.

  1. Cream the butter
  2. Add the sugar, vanilla sugar, lemon zest and the mark of the vanilla bean. Mix until the sugar is dissolved and the mixture is creamy
  3. Add the eggs one after another, mix in between
  4. Add the grounded almonds and flour, combine well
  5. Put the dough in a piping bag with a star tip and pipe lines, circles or s-shapes on a baking paper

    1. If you are using a machine for the cookies: Chill the dough for 1 hour in the fridge before piping it with the meat mincer
    2. Alternative by piping by hand: If the dough is too hard to pipe, first pipe the dough with a piping bag and chill the baking sheets for 1 hour before baking
  6. Bake for 10-12 minutes at 200°C (175°C fan oven)
  7. Let cool completely and decorate with melted chocolate and some sprinkles

Ingredients

  • 125g Butter
  • 250g Sugar
  • 1 Tbsp Vanilla Sugar
  • 1/2 Vanilla Bean
  • 1 Tsp Lemon Zest
  • 2 Eggs
  • 125g Almonds, grounded
  • 350g Flour
  • 200g Chocolate to melt
  • Sprinkles
